When I first started working with steel, I decided to try quenching it in water, and I quickly understood why people advise against it. It’s incredibly effective but quite dramatic. Nowadays, I prefer using oil. It’s much calmer and more forgiving, and my pieces come out strong without that constant worry about cracking.
